Chocolate truffles are good all year round, but I tend to associate them with Christmas. They make great edible gifts, and are actually really simple to make. At the moment we are all about Christmas themed baking, and last weekend we came up with these cute White Chocolate and Raspberry Snowman Truffles.
Jump to RecipeThe idea for these actually came from my daughter Isla. Whilst making normal chocolate truffles last year, she asked if we could make white chocolate snowman truffles. We did give it a go, but they didn’t turn out that great. This year we tried again with a lot more success.
This recipe has evolved over several attempts. The problem with white chocolate is it already contains alot of cream so you have to reduce the amount of double cream you add to make the truffles. Too much and the mixture doesn’t set properly, too little and it’s too hard to make into balls.
Originally we were going to make them coconut flavoured truffles, but the coconut flavouring made them a bit too sickly. Again after a few attempts we settled on these white chocolate and raspberry truffles, which seems to be a winning combo!

How to Make White Chocolate and Raspberry Truffles
The basic recipe makes really delicious white chocolate and raspberry truffles, and you could leave it as that, you don’t have to turn them into snowmen.
When turning our truffles into snowmen, we covered them in dessicated coconut. However if you are just making simple truffles, you could also use chopped nuts, chocolate sprinkles, cocoa powder or even edible glitter.
You can also play around with the flavourings. As I mentioned before coconut flavouring for us was a little too sickly, but cherry and raspberry both worked well. If the truffles you are making are not intended for children, you could even substitute the flavouring with a favourite liquer.
Below is the basic recipe for the truffle mixture, but I go into more detail later about how to decorate them and turn them into snowmen.

White Chocolate and Raspberry Snowman Truffles
Ingredients
- 200 g White Chocolate
- 80 ml Double Cream
- 2 tsp Raspberry flavouring
- Desiccated coconut for decorating
Instructions
- Melt the chocolate in a bowl over a saucepan of boiling water.
- Add the cream to a seperate small saucepan and heat until it reaches boiling point.
- Quickly add the cream to the melted chocolate and whisk with a wire whisk until fully combined.
- Transfer the mixture to a small bowl, cover and refrigerate for at least an hour.
- This is the messy part! Use a spoon to scoop out some mixture and make into balls with your hands.
- Then decorate as you wish. You can simply roll them in some desiccated coconut and leave it that, or if you'd like to turn them into snowman truffles I go into more detail about how to decorate them later in the blog post.
How to Turn Your White Chocolate and Raspberry Truffles into Snowman Truffles
This is the fun bit, making the truffles into snowmen. Isla and I had great fun in the kitchen doing this together.
What You Will Need To Decorate The Snowman Truffles
- Desiccated coconut
- Edible Silver shimmer spray
- Raspberry mushroom sweets
- Orange sugar paste made into small carrot shapes
- Edible sugar paste glue
- Chocolate Chips
- Chocolate ball sprinkles
- Fizzy rainbow belts
How You Make Snowman Truffles
- Take your truffle mixture once chilled and make two different size balls, one for the heads and a larger one for the bodies.
- Roll the truffle balls into some desiccated coconut and make sure they are well covered.
- To stick the two truffle balls together, take a small amount of truffle mixture and warm it between your fingers, then use it as ‘glue’ to stick the smaller truffle on top of the large one.
- Spray with edible silver shimmer spray (optional).
- Attach the mushroom hats again using a small amount of the truffle mixture.

- Add the small chocolate ball sprinkles for eyes, and chocolate chips for buttons.
- Add the sugar paste ‘carrot’ noses, you may need to use some edible glue to get them to stick.

- Cut a fizzy belt in half longways, and drap around the ‘neck’ of the snowman to make a scarf. Secure in place with either some more truffle mixture or edible glue.

That’s it, simple, cute but absolutely delicious! A perfect Christmas treat or as an addition to a festive North Pole Breakfast.

The idea is intreguing. I use a recipe for chocolate dough to make a covering over strawberries. I cut the leaves off so they stand up upside down.
I make a thin flat wrapper of white chocolate to cover the strawberry.
Then I cut, shape a face, eyes, no idea, mouth & hair.
I space these faces, along with dark chili flavored chocolate covered strawberries around a carved watermelon.
