For her 5th birthday party the other week, Isla requested a My Little Pony rainbow cake. Always up for a challenge, I obliged and tried my best. I decided to carry on the rainbow theme for some of the party food and created rainbow cupcakes, cake pops and rainbow coloured fruit skewers to balance all the cakes on offer!
Nothing quite sums up the taste of Christmas than a mince pie with brandy cream! As i’m not a huge lover of pastry, I decided to set about trying to make a cheesecake as a twist on the classic mince pie, that incorporated all these festive flavours in a delicious dessert perfect for the upcoming holiday season.
I got into jam making a few years ago, and even though I don’t eat much jam myself I love making it. Nothing gives me greater pleasure than turning produce grown in our garden in to lovely jam. We have rhubarb in abundance this year, so I am experimenting with different rhubarb jam recipes, and this is the first of them.
These were a little bit of an experiment, but actually turned out really well and seemed to be a big hit in our house! I would like to add that I made them before joining Slimming World, as they are definitely a naughty but nice treat!
I bought this great recipe book around Christmas time as I though a mug cake was such a fantastic idea! It’s taken me this long to actually try it. It really does only take 10 minutes to have delicious chocolate cake for one, and hardly any washing up- bonus!
Slow Cooker Chocolate Fudge
I’ve been meaning to try cooking fudge in the slow cooker for ages, and only just got round to it. It’s really easy and the results are yummy! I’m planning on experimenting with different flavours, but to start with I thought i’d stick to a basic chocolate fudge recipe.
I couldn’t resist these cute cutters, perfect for making Springtime animal cookies. Sugar cookies work best with cutters as they tend to spread less when baked so preserve the details. After trying several different recipes, and tweaking them, this one seems to work best for me.
This is my version of chocolate scotch eggs, and with plenty of creme eggs around this time of year it’s the perfect excuse to make them. They didn’t turn out quite as pretty as I would have liked them too, but they were yummy! They were also quite messy to make! However if you want to give them a go here’s how I did it.
